Cheesy Zucchini-Tuna Bake

Real Mom Prep Time:  12 minutes

          Preheat oven to 425F/220C.

medium zucchini

  Slice thinly.
           
1 cup   250 mL

bread crumbs

  Combine in a bowl.

basil

  5 mL

oregano

   

 

   

salt

   
     

pepper

can (19 oz/540mL) diced tomatoes

  Drain.

 

   

 

   

2 cups

  500 mL

mozzarella cheese

  Shred.

cans (7 oz/198 g each) tuna

  Drain.

 

   

 

   

 

   

 

  Grease a casserole dish.

 

   

 

  Layer ingredients in the dish:

 

   

 

  half the zucchini

 

   

 

  half the tomatoes

 

   

 

  half the bread crumbs
          half the cheese
          half the tuna
           
          Repeat.
           
1/2 cup   125 mL

mozzarella cheese, shredded

  Sprinkle over top.
           
          Bake 30 minutes or until
          bubbly.
